I add sliced egg plant, diced tomatoes and I put the onion on top for flavor but take off (just because I don't like onions). I used canned mushrooms.

Use olive oil spray instead.
Excellent recipe. Spray with oil add tomatoes and there will be no points.

We use this all the time now. The squash is utterly melt in the mouth after roasting in the oven, and it is very filling.

Delete salt & pepper and change the heavy olive oil to a spray of EVOO.

You can also add some cauliflower or broccoli, keeps getting better!
I add a tablespoon of balsalmic vinegar to the olive oil and throw veggies on the grill. My usual combo is thick cut zuccini, mushrooms, green beans, and whole peppers.
