I add sliced egg plant, diced tomatoes and I put the onion on top for flavor but take off (just because I don't like onions). I used canned mushrooms.

We use this all the time now. The squash is utterly melt in the mouth after roasting in the oven, and it is very filling.

I add a tablespoon of balsalmic vinegar to the olive oil and throw veggies on the grill. My usual combo is thick cut zuccini, mushrooms, green beans, and whole peppers.
