Vegan Brown Rice Pudding

Lovely natural brown rice pudding made with wholesome ingredients.

Ingredients

Directions

  1. Whisk milk and cornstarch together in a medium saucepan.
  2. Add cooked rice, maple syrup, raisins, almonds (if desired) cinnamon, nutmeg and ginger.
  3. Simmer over medium heat for 4 minutes, stirring constantly.
  4. Remove from heat and stir in vanilla.
  5. Let sit for at least 15 minutes to allow it to set.
  6. Chill if desired to serve cold, or serve warm.

Wonderful made with almond milk instead and didn't add nuts.
I gave this recipe 5 stars because for a simple and nutritious breakfast/afternoon snack it is wonderful! It wasn't the best thing I ever tasted or anything but considering it took about 5 minutes to cook (because I had left over brown rice from dinner) it was very good:) I will definitely make this a staple in my home! Great way to use left overs, save money, and not waste food (which is my pet peeve!!) Thanks for sharing this recipe!
