Chickpea and Couscous Salad
This combination of flavors makes for a light summery salad.
Ingredients
Directions
- Combine diced white onion with lemon juice and set aside. The lemon juice will minimize the bite of the onion, making it mild. Cook the couscous to the directions of the package and set aside as well.
- Drain can of chickpeas and put in a bowl and toss with the green onion and olive oil, season with salt and pepper.
- With a fork, loosen up the couscous and blend in with chickpea blend.
- Now combine lemon juice, white onions and tomatoes and toss together.
- Finally, drizzle honey on creation and mix well. Refrigerate salad for about half an hour to allow the flavors to set. Sprinkle with herbs of your choice prior to serving.
- Note: you can substitute the lemon juice for lime juice, and honey for brown sugar, and also substitute white onion for celery or even green apple!

I love this recipe. It's quick and easy to make and I have it all the time. I highly recommend for a fan of chick peas,such as myself.

27.98 grams of Carbs all in one meal? Definately NOT good for Atkins Induction Phase. take out the honey, couscouse and replace it with squares of motzorella cheese and reduce the volume chickpeas, make up the difference -That might be a reasonable side to a meat dish.

it;s ecxellent. since I made it with onion,1 bell pepper,like one teaspoon or 2 of virgin olive oil and chopped garlic. sauted everything in the little oil with a little bit of salt and ate it like a warm salad. Did not use the lemon nor the honey.It was my evening meal today
