I never thought I would get the chance to be a mom. I have PCOS which is Polycyctic Ovarian Syndrome. Thanks to some infertility adventures, and a lot of prayer, we were able to have a healthy girl.

Now, I am a stay-at-home mom of a very active 2-year old. Thanks to my husband, I was able to quit the banking industry of 10 years to raise our little girl.

I have recently found out that my PCOS is caused by insulin resistance. So diet and exercise play a very important role in my life now. Not only has it caused my infertility, it increases my risk to develop diabetes, ovarian cancer, and heart disease. I have too much to live for now to have those stop me.

I was doing really well with WW Points from Aug. 2007 to FEb, 2008, then I fell off the waggon. But May of 2008 is my time to get back to it! With help of course. Thank goodness for a very supportive husband. -- Julie

At the minimum WW points and hard to lose weight
When I was doing points, at first the weight seemed to fly off. Then came the slowing and then a plateau. So what I did was switch from points to the core plan. That change was good for me for a few months. After that, my portion size started to get out of control and I went back to points. I think that my body just needed a change. Like right now, I am doing Core again for a few weeks. But whatever you do, don't go under you points too much. Your body will go into starvation mode and start storring calories. Great job on adding more exercise too. You are on the right track. Good luck in your weight loss journey. Very Happy

Summer B.E.A.C.H. Challenge!
MINI CHALLENGE - RECIPE CHALLENGE - GREEN SEA TURTLES

Hello All. Here is my recipe for this weeks challenge. It's a side dish, that we are having tonight with pan seared scallops. I have never cooked with bok choy, so I am pretty excited.

Sesame Stir-Fried Chinese Greens

Ingredients:

2 teaspoons canola oil
2 pounds baby bok choy
2 tablespoons low-sodium soy sauce
1 tablespoon rice wine vinegar
2 teaspoons toasted sesame oil
1 tablespoon toasted sesame seeds


In a wok or large frying pan heat the oil over high heat until very hot. Add the bok choy and stir-fry until they begin to soften slightly, 1 to 2 minutes. Add the soy sauce, vinegar and sesame oil and cook until just done, 1 to 2 minutes longer. Sprinkle with sesame seeds and serve.

I'm hoping my little girl gives it a try. She has been getting pretty brave with trying new foods. Now, she doesn't always like them, but she is trying.

GREEN SEA TURTLES
TALLY, WEIGH IN, & MINI CHALLENGE FOR COOKING

Hello everybody. Look out, it's Friday!!!

Well, I made my goal of another 5 for Thursday the 14th. My Weight this morning was 142.5 pounds. So I got rid of that Aunt Flo Weight. I am estimating today's TALLY to be a 5 as well. I play running my tail off while Abby is taking a nap this afternoon.

Abby and I biked again, and added an extra mile. I was working so hard that my heart monitor went off. LOL. So I had to call that in, and everything was fine. Very Happy Only one more week, and I get to take it off! Very Happy

I also got all my water in before 5:00 pm. I wanted to get it in early, because we took our daughter to the Washington County Fair. So many temptations!!!!! But, we did well. We split a Gyro, and a lemonaid. Abby even ate some Gyro meat. I ate most of the lettuce and tomatoes, My Husband ate most of the meat. It was a little salty for me this time. Last year at the fair, I ate a whole Gyro myself. And was still hungry!!! LOL. The Kettel Corn was calling me too. So I bought a small bag, and only had one small handfull. Very Happy

GREEN SEA TURTLES
TALLY

Well, today I am on track for all fives this week. I am giving myself another 5 today. Abby went biking with me, and we went 7 miles. Well, she rode in the seat behind me. I also ran around after Abby in the yard for over an hour today. That has to count for some exercise. And yes, that nasty water went everywhere with me today. I swear I hear sloshing sounds when I walk. LOL. Well, I gotta go. Olympics are calling me. I am addicted! Have any of you seen Dara Torres? She is the 41 year-old American swimmer. I would kill to have a body like hers!!!! She is a real inspiration. But, I have to remember that she probably has a ton of personal trainers and personal chefs, and trains 6 to 8 hours a day. Plus she is a mom of a 2 year old.
