Indian Dhal (Lentils)

Healthy and delicious Indian inspired dhal.

Ingredients

Directions

  1. Cover lentils with boiling water and allow to stand for 15 minutes.
  2. Heat olive oil in a pan and cook onions and garlic for 2 minutes.
  3. Add cumin seeds, turmeric and curry powder. Cook for 2 minutes until fragrant.
  4. Add mushrooms and green pepper. Stirfry for a further 2 minutes.
  5. Add stock and lentils. Cook over medium heat for 35-45 minutes, or until dhal thickens.
  6. Stir frequently to avoid sticking.

Reviews 
Typically Chicken stock is not used in Indian cooking, for this dish, which is a vegetarian food. Use water instead. Add grated ginger along with the garlic. Add chopped tomatoes, salt to taste. Add chopped cilantro at the last minute of cooking. Instead of mushrooms and green peppers, you can experiment with other vegetables, such as beans, asian eggplant, carrots, cabbage, bok choi, radish etc. It is a very versatile dish. Serve with rice or chappati ( Whole wheat Tortilla).

I omitted the curry powder,served it on instant white rice, garished it with diced tomatoes, young green onion tops, and used sriracha and ginger paste

As long as it isn't eaten often - lentils are sort of out of the question.

An enjoyable meal, would defanetly make it again enjoyed by all, i added a bit of chopped coriander to it just befor serving. thank you for sharing

I was out of several of the spices so instead I added tho the onion/garlic combo 3 tbsps of a Tandoori curry paste made by PATAK. I let it cook for the same 2 minutes and then continued with the recipe. Easy and delicious.
