Cheese & Vegetable Frittata
A low carb style frittata full of veggies.
Ingredients
Directions
- In an ovenproof pyrex dish, steam the washed spinach, and other vegetables for about 5 minutes, just to soften a little.
- In a separate mixing bowl, beat the eggs with the cream and water. Add the grated cheese, salt and pepper, mix well.
- Mix the vegetables around in the pyrex dish. Leave to cool a little before pouring the liquids in.
- Sprinkle with a little cheese and bake for about 35 minutes in a 375 °F (190 °C).
- Serve with baby spinach or leafy greens.

Seemed really soggy. I think more eggs (or substitute) and less cream should fix that.

yeah, more eggs, fat free 1/2 & 1/2, and lowfat cheese and this recipe is good to go.

To follow Atkins, keep the ingredients full fat or you'll be adding extra carbs.
