Babanatza with Bananas

A fruit kugel sometimes known as matzah pudding.

Ingredients

Directions

  1. Break matzos into bite sized pieces in large mixing bowl. Boil water and pour over matzos pieces.
  2. In another medium mixing bowl beat eggs and raisins. Add raisins and eggs to matzos.
  3. Peel, core & dice apples. Mix apples, nuts, oil, honey and sugar in bowl previously used for mixing eggs and raisins.
  4. Add mixed ingredients into matzo egg mixture and mix.
  5. Grease 2 deep 2 quart baking dishes. Pour mixture into dishes.
  6. Sprinkle with cinnamon and butter.
  7. Bake at 350 °F (175 °C) for 1 hour.
  8. Serve warm or cold.
