Walnut Cranberry Oatmeal Cookies
Truly healthy oatmeal cookies jam packed with goodness.
Ingredients
Directions
- Pre-heat oven to 350 °F (175 °C).
- Combine buttery spread and sugars and beat on high till light and fluffy - about 3 minutes.
- Add mashed banana and vanilla, mix well.
- Combine flour, baking soda, salt, spices in a separate bowl.
- Add to butter and sugar mixture and combine on low.
- Fold in oats, cranberries and walnuts.
- Place rounded tablespoonsful of dough on pan, spaced evenly and bake for 10-12 minutes.
- Cool on pan for 10 minutes. Cookies will be soft and chewy.

Mmmmmm...these cookies are delicious & healthy too! I replaced the butter with unsweetened applesauce, added a lot less sugar & brown sugar then it called for, and used whole wheat flour! They turned out great!

Just made these cookies, only thing is added a small amount of applesauce and little less butter. then did half white flour and half wheat flour. They are nice a soft and my friend liked them too :)

I used 2TB unsalted Butter (+2TB apple sauce)and kept the White sugar for a crispy/crunchy cookie, but used 1/4C Splenda Brown Blended sugar and cut the spices to 1/4 teaspoon ... my tweaking only raised cals to a very delisssh 105 calories each*~

My husband LOVES these biscuits/cookies. I left out the banana and used less brown sugar and used chopped dried prunes instead of cranberries - very nice. Also left out the pumpkin pie spice as we don't get this in Australia but still delicious. I have one only for a rare treat as they are very morish.

These are delicious but I was a little surprised that 1cookie is 99 calories. It seems like a lot of calories for one little cookie. Oh well ... well worth it!!!
