Spinach Stuffed Chicken Breast

Truly delicious spinach, onion and feta stuffed chicken breasts.

Ingredients

Directions

  1. In a large non-stick skillet, heat olive oil; sauté onion until golden, 5 minutes.
  2. Wilt spinach (steam or heat damp in pan); stir in lemon zest, feta, salt and pepper. Set aside.
  3. Divide spinach mixture between chicken breast cutlets.
  4. Roll up and secure with toothpicks.
  5. In same skillet, heat remaining oil over medium-high heat.
  6. Cook chicken, turning occasionally until golden brown and cooked through, about 10 minutes.
  7. Remove toothpicks.

Very, very good but would try it next time with boneless chicken thighs. Easier to handle and keep together.

This is incredibly delicious!! I paired it with Mashed Cauliflower and it made a healthy, low carb dinner that even picky teenagers enjoyed!

I love this. It's delicious. Add some garlic to the pan while you're cooking the chicken, makes it even more delicious. The toothpick thing is a little tricky-soak them beforehand to ensure they won't burn.

Love it. Didn't have chicken breasts but I had tenderloins (smaller cut), so I made little bite sized ones using toothpicks to hold them together. Turned out really good actually.

Fantastic on a baby spinach salad with vinagrette! Also, I recommend chopping up sun dried tomatoes and adding that to the filling!

I really liked this dish. However like many others I think I will not add the lemon zest.

Sounds very tasty but I don't like onions so I am going to switch them with fire roasted tomatoes.
