Egg and Bacon Breakfast Muffins
A protein packed on-the-go breakfast muffin.
Ingredients
Directions
- In a skillet, cook chopped bacon over medium heat until cooked through. Drain grease.
- In a bowl, beat the eggs. Add onion, green onion, tomato, salt, pepper, garlic powder, and hot sauce (like Tapatio brand).
- Stir in bacon and cheese.
- Spoon by 1/3 cupfuls into greased muffin cups.
- Bake at 350° F (175° C) for 20-25 minutes or until tops are set and a knife inserted near the center comes out clean.

Taste is good. I subbed turkey bacon and would eliminate the added salt when I make this recipe again. They hold well also for a grab-and-go make ahead breakfast.

These are very good!! It is a quick meal to go in the morning. After I made a batch, I just pop one in the microwave for 30 seconds and out the door.

I agree that these are very tasty! I changed it up a bit, using mushrooms instead of the onion. Next time think I will use ripe olives! Also used the HUY FONG Sriracha Sauce(bought it special to use in the Asian Cole Slaw recipe), and only used 3 tspn. as I am not fond of overly spicey. DELISH!!!!
