Egg and Bacon Breakfast Muffins

A protein packed on-the-go breakfast muffin.

Directions

  1. In a skillet, cook chopped bacon over medium heat until cooked through. Drain grease.
  2. In a bowl, beat the eggs. Add onion, green onion, tomato, salt, pepper, garlic powder, and hot sauce (like Tapatio brand).
  3. Stir in bacon and cheese.
  4. Spoon by 1/3 cupfuls into greased muffin cups.
  5. Bake at 350° F (175° C) for 20-25 minutes or until tops are set and a knife inserted near the center comes out clean.

Easy to make, easy to grab and go after storing. Refrigerated to store, rewarmed 30 seconds in microwave. Easy for kids too. I'm afraid they're going to be all gone by the time I get home tomorrow once they find out how good they taste.

This is a great morning snack. I didn't use the green onion and the tomato. Instead I put in mushrooms, a handful of spinach and red pepper. I also substituted ham for the bacon. Fantastic!!

I used turkey sausage instead of bacon and they were outstanding!!!

I had to alter this a bit since I don't like tomatoes or onions. I substituted fresh chives for onion, I also added fresh parsley for color. I used Bacon bits because I was in a hurry. Still tasted ok, a little bland probably would have been better if I used real bacon.

My family and I just love it. We will do them on a regular basis now. These delicious muffins are quickly and easily made and perfect for taking them to work or to the university.
