I have decided I am going to remain eternally 59 (although I often feel younger).
2012 Update: After reading Wheat Belly in May this year -grains, especially wheat are entirly off the table now. Wheat was kept me falling off the wagon. All my cravings for wheaty foods and sugar have totally gone. Down to a size 14 now..which for me is excellent at 5' 8".

I actually went on my first low carb diet ever in January 2011.

Bread has always been my favourite food and I was not sure if I could give it up.I have always also eaten a fairly high fat diet most of my life and actually nver had a problem with weight until menopause and a more sedentary lifestyle.

I figured if I gave up smoking after 45 years I could possibly also give up bread. Chocolate is another story but I don't think I will have to give that up.

I had started off the week of "dieting" just watching calories but the more I read and researched the more I opted for low carb and cut out grains and processed foods which is primarily what I have done since Jan 8. 2011
I could not get as low as 20 g carbs in Atkins induction type.
I think I really follow a blend of paleo/low carb. I started with Atkins as a base. Omitting grains and keeping carbs low as possible as well as avoiding most processed foods.

I do not use a scale and could estimate my weight at around 192-195 at that time..feeling much too plump for my self.
Todays weight is also an estimate..I really have no idea but somewhere around 180 ish.

Simple Ways to Cut 500 Calories a day from your Diet
If you want to make it easy to cut calories..cut out carbs and increase fat..sounds crazy but is the carbs/sugar that keep you hungry for more. eliminate all forms of wheat (including small amounts in processed food0better yet give up all processed food. This is not nearly as hard as it sounds. when you get hungry you reach for some cheese, or some other creamy fat food such as whipping cream and in a short time 1-2 weeks or sooner you will convert to a fatburner and your appetite will be friend as your hunger will disappear.
You change from eating junk (packaged food) to real healthy veggies, fat, meat and a little fruit now and then) and it is competely satisfying. No hunger or starvation. Fat is not the enemy. That is a HUGE government error in promoting low fat.

I read the book on the advice of a friend and although I was already low carb eliminating wheat and grains has sure cut my inches, increased my energy.
I highly recommend giving it a try.

The above is pretty much totally incorrect and backward. very old school and non informed on fats and metabolism. you would have done much better to say nothing than to promote such misinformation. eating cholesterol does not raise cholesterol the same way eating fat does not make you fat.

saturated fat is good and healthy, butter, cream, cheese, meat (from pasture raised where possible)

plant fats conversely for the MOST part are not good fats. some yes, coconut, avocado, and olive oil are good. fats from nuts seeds, corn, soy, saff and sunflower and especially canola are BAD for you!!!

Their is a wealth of "correct" information on fats if you take the time to find it and actually read it.
insulin and sugar make you fat..NOT fat!!
sugar comes from carbohydrates,

your body will NOT burn fat if you cut it out..it will first burn any carbs and then it will store any leftover carbs as FAT!!

if you eat fat your body converts to using fat as fuel.
They are 2 different and distinct metabolic processes
you cannot burn fat when your body is in the carb burning mode which it stays in if you keep eating carbs, grains, veggies, fruit . these MUST be low for the body to burn fat as fuel.

Homemade Ice cream
I make mine with a whisk.
The bowl metal or glass and the whisk and whipping cream need be very cold. 1/2 hr to an hour in the freezer for 500 ml 35% cream. Be sure to open the carton and use a knife to scrape the sides of the container.

I whip it just until it begins to thicken..not until it is exactly fluffy.
then ad 2-3 drops of stevia (or to taste)and a tbsp or 2 of cocoa powder and whip/blend it thoroughly.
I do not like it sweet just not bitter. This makes a "milk" chocolate.
Put in tuperware and pop into freezer.
It satisfies my ice cream and my chocolate tooth. within 20 minutes or so you can eat around the frozen edges. Once it is completly frozen you must let it thaw a bit to eat. It is a quick recipe for a sudden ice cream craving.
