Aaaagghhhhh I want some pasta so bad!! So I work for a company that sells books. My job is to scan the book for value and list it accordingly on Amazon and a few other places. Today has been cookbook after cookbook after cookbook. I am dying here!! Its been mostly "Your Italian Kitchen" "Pasta even an Italian grandmother Could Love" and stuff like that.

I love my job, but today, I want to burn the place down!!!

I would love your job...I read several books a day and must now own stock at Amazon for sure. That being said, I too love pasta. I have been substituting zucchini noodles and butternut squash. You can buy them already made( by spiralizing) or they also come frozen both rather expensive, though if you own a kitchen aid mixer they sell an attachment to do the spiralized veggies. Spaghetti squash is another option.

I'm going for the low carb. Easier to put my favorite toppings for pasta in a low dish and microwave or bake without the pasta or carb laden veggies. Used grape tomatoes instead of jarred sauce. Works really well for pizza. Got the taste taken care of. Tried the zucchini noodles or spirals. Didn't quite cut it as far as taste or texture. I did see where a member did a chicken crust. Might try that in the future.

I do feel for you looking at all those cookbooks! Clips of great looking dishes on tv and online are tough. When looking at some of them, I'm thinking I could make that in a way to fit into my WoE!

I go ahead and fix the pasta. I eat a small serving of it with salad and am learning to e satisfied with that. Used to eat a heaping plate full.

Oh girl! I was the poster child for pasta. Never met a noodle I didn’t love! However, it doesn’t love me. Diabetes and morbidly obese...I can’t indulge anymore. I have made sauce, chock full of mushrooms, meat, tomato etc. topped with cheese and that satisfied....but I still missed my absolute favorite food..spaghetti. I didn’t care for the crunch of “zoodles” but many people love them. I like the shiritaki noodles, although many find them disgusting lol. I find if I rinse them super good then pan fry them until their dry and almost squeaky...add them to the sauce and cook for a few minutes. They soak up the sauce (Alfredo or red sauce) really well. I can Insert fork and twirl...yummy. It keeps me from reaching for the real stuff 😂. Keep trying different things until you find something that “scratches that itch”. You’ve got this girl!!!

If you are keto try the Zoodles with homemade Alfredo. I have it when i need to kill my pasta craving. I think the real sauce tricks my brain about the Zucchini😂

If you don't like the crunch of zoodles, I steam mine first. I never really liked pasta very much, but I always preferred soft pasta when given a choice. So, eating crunchy zoodles was always really bizarre. 😵 I use a potato peeler and knife to make different thicknesses of noodles. I made fettuccini noodles tonight for lunch tomorrow (salami and feta alfredo, yes!) I steam them for a little bit in the microwave before adding any sauce or toppings. 🌸 the sauce and toppings were always my preferred part of the meal, and zucchini doesn't overpower it at all.

I have found a recipe I want to try for noodles made with egg and mozzarella cheese. You melt the cheese in the microwave, then add the egg until it is completely incorporated, let it cool and roll it out. Then you can slice it to the desired noodle consistency and chill it. Boil water, like you normally would and add the "pasta". Once it floats, its ready. I want to try it, but since I live with my inlaws and the kitchen isnt "mine" I dont get to experiment very often. I am praying for a way to get a place of my own.

If you look online, you can find a product called Miracle Noodles (some grocers may carry them too). They are made using Shirataki. This is plant-based. Less than 1 carb per serving. They have it in 'rice', 'Fettuccine' and 'Angel Hair'... zero calories, soy free, gluten free

My friends found some pasta that was made completely with chick peas. It was tasty.

For me, it was bread, but I had one bleep of a motivator! Gluten intolerance bordering on Celiac disease put me in the little room for hours and days after a sandwich. This started in 1993, so I am over wanting bread, now! Find your motivation. We support you!
