Tortilla Soup

Healthy, very low calorie and tasty.

Ingredients

Directions

  1. Place chicken, diced tomatoes and chilies in a saucepan.
  2. Chop onion and add to pan.
  3. Add raw brown rice, seasonings and chicken broth. Cover.
  4. Once it boils, lower to a simmer and cook for 20 minutes.
  5. Note: cheddar cheese, sour cream or a few tortilla chips can be added for a few extra calories.

I will add some vegetables, celery, probably...should be corn to fit the soup...but not the diet!
