A hearty and filling chili.
Ingredients
Directions
- Heat olive oil in stock pan over medium high heat.
- Sauté onion until golden brown.
- Add chili pepper. Stir for one minute.
- Add potato and 2 cups beef broth. Cover pan and reduce heat to medium. Simmer about 10 minutes - until potato is almost tender.
- Add stewed tomatoes and their juices, all the beans, garlic, spices, and zucchini, Season to taste with salt and pepper.
- Simmer uncovered until potato is very tender and sauce thickens, about 10 minutes.
- Garnish with chopped cilantro and serve over brown rice.

OK, this needs some tweaking for Phase 1 of the Fat Smash. Here are my edits:
-White potatoes are not allowed in phase 1.
-The beef broth is not allowed. Phase 1 is vegetarian. Vegetable broth might be allowed depending on ingredients list.

This recipe is awesome. I did add a couple of cups of the vegetarian version of ground beef to make it more appealing to my husband. It turned out really good.

This recipe is DELICIOUS and perfect for phase 1 of the detox portion of the Fat Smash Diet.
I substituted a few seasonings and added a can of corn. Haven't had it over rice yet, but I'm thinking that the juices will absorb into the rice nicely. If not, I would suggest using less broth or juice from the stewed tomatoes, as I like chili a little thicker.
