Baked a batch of these up today. All I can say is YUMMY! While these are very good, I think I'm going to try them with egg white to make them crunchy....

I will say I am not a huge fan of sweet potatoes, but I decided to give these a try. Simple enough to make and I was getting tired of plain potatoes. I added cayenne pepper as well and it gave it a sweet/spicy flavor. Not a bad side dish. I will make it again. I gave it a "4 stars" because it wasn't an "OMG gotta have this again" kind of dish!

This is great for WW. The potatoe portion is 1 point in WW terms. Olive oil is great for you. Cinnamin is very good for you too. Can't go wrong with this recipe.
