I feel one cup olive oil was a lot of oil.

This sounds good if you increase the chicken and decrease the oil. I think there may have been an error when entering the ingredients or the number of servings because a 1/3lb chicken patty doesn't sound like enough for 5 servings unless this were an appetizer. I am initially giving this a 3 star rating because I haven't tried it, but will adjust once I have a chance to make this.

Without even trying it I can tell that 1 cup of olive oil to 1 6 - 8 oz chicken breast is WAY OUT OF PROPORTION for sauteeing. Olive Oil POACHING, maybe, but it will never brown. More like a chicken vesuveo but without all the great spicing.

Why the heck would you need 1 cup of oil? I only need 2 tbsp to saute a piece of chicken myself...

This recipe is so good, I have made it twice and plan to make it a regular dish. The chicken is so moist and juicy. And I used three chicken breasts and it came out great both times.

I haven't tried this yet, but to "The Next Number" and your post - this is labeled LOW CARB not LOW CALORIE/FAT. Read up some on Atkins/South Beach and you may find the low fat/low cal diets aren't always the healthiest for you and perhaps removing processed foods and going with whole foods would be better?

Is there a misprint in the ingredients for this? It says to use 1 chicken breast, but that it makes 5 servings. Also, a cup of EVOO seems a tad excessive for just one breast. I was thinking I would make it with 3-5 breasts, and keep the amounts of the other ingredients as written. Wondering what others have done???
