This recipe is pretty darn good.
The servings are a little large. Even if the calories are low, it is hard to finish a full serving.
And not sure why everyone is freaking out about the serving size. The recipe clearly states four servings. It is pretty easy to divide the mixture into four equal parts.

My baby liked it, but no one else did. Maybe I didn't cook it long enough but when I used the mixer on the cauliflower it flew everywhere ... quite messy ... I think I will stick to mashed potatoes ...

I steam cauliflower and mash it instead of potatoes. I had been fooling my kids with this recipe (without cheese) for years and have always loved them.

I made this full fat version before my weight loss and it is just as good. Would have been even better if I had followed the recipe and not added too much garlic! OOPS! Will make it again and the right way next time!

I call this recipe "alternative rice". I smash the cauliflower into very small pieces and use to replace the rice in my meals. Very nice!
