Mashed Cauliflower

Lovely steamed cauliflower mashed with cheese and garlic.

Ingredients

Directions

  1. Place the cauliflower in a steamer and steam to desired tenderness.
  2. In a bowl, mash the cauliflower with garlic, chicken broth and parmesan cheese, all to taste.
  3. Serve warm.

I call this recipe "alternative rice". I smash the cauliflower into very small pieces and use to replace the rice in my meals. Very nice!

I use fat free creamer instead of the chicken broth. It is great.

I was looking for this recipe! I can't have cheese but it is still good with out it.
I made this full fat version before my weight loss and it is just as good. Would have been even better if I had followed the recipe and not added too much garlic! OOPS! Will make it again and the right way next time!
