Mashed Cauliflower

Lovely steamed cauliflower mashed with cheese and garlic.

Ingredients

Directions

  1. Place the cauliflower in a steamer and steam to desired tenderness.
  2. In a bowl, mash the cauliflower with garlic, chicken broth and parmesan cheese, all to taste.
  3. Serve warm.

Love 'em, but I will add a starch to the meal, too. All recipes are pre-approved for the NO S Diet. I usually add a T. of yeast powder. Adds more chicken flavor and a little protein. Worth it. By the way, you don't need a steamer. You can put the whole head in a pot it will fit in and add an inch of water. Heat and add water until the head is soft. I often pressure cook mine.

SO GOOD! I mashed it up with a Laughing Cow wedge, a little chicken broth, a little butter and a little sour cream. Put some shredded cheddar on top before baking. YUMMY!

I think based on the fact that a head of cauliflower weight about a pound, give or take, that the serving sizes are about 4 OZ each or about 1/2 cup.

Love Mashed Cauliflower! I boil it in water, and add a very small amount of non-fat milk to help make it creamier, salt and fresh cracked pepper. Next time I will try adding the garlic...sounds yummy!

Will try this - but I cream my cauliflower with a hand mixer so it's smooth, add some cream and top with a little shredded cheddar! Just like creamed potatoes. yum!

My husband loves it and so do I. I don't use cheese, I just season to taste and I do use a little real butter. So good.
