Balsamic & Parmesan Roasted Cauliflower
A yummy side dish or meal.
Ingredients
Directions
- Pre-heat oven to 450° F (220° C).
- Discard the base and leaves from the cauliflower, and cut the remaining cauliflower into small pieces (like you would to broccoli).
- Toss in a large bowl the cauliflower, oil, salt, thyme, and pepper. (Use pepper as preferred and if you like use a little lemon pepper as well.)
- Spread the cauliflower on a cookie sheet and place in the oven for 15 to 20 minutes so it softens and starts to turn golden brown.
- Take the cauliflower out and toss it with the balsamic vinegar and the parmesan cheese.
- Return to oven and roast for another 5 to 10 minutes so the cheese melts.
- Note: depending on the type of parmesan cheese, the calories can end up higher or lower.

I love roasted cauliflower and I love balsamic vinegar, but unfortunately I just didn't love the two together. The amount of pepper and parmesan both seemed excessive so I used much less. Next time I'll skip the balsamic vinegar and sprinkle a little parmesan on top of the cauliflower.

waaaaay too much pepper. Perhaps they meant tsp and not tbsp? i only put in 1 tbsp and it was too much.

Very low-GI and tastes good, though I would add more vinegar.

Nice and flavourful - didn't need to use all the parmesan - probably used 1/2
