Baked Creamy Chicken and Broccoli

Tasty chicken bake that all the family will love.

Ingredients

Directions

  1. Preheat oven 400° F (200° C). Cook the broccoli (steam or boil).
  2. While cooking broccoli, melt butter in pan, add garlic and cook for 1 minute.
  3. Add cubed chicken and sauté for about 5 minutes.
  4. In a bowl mix mayonnaise, lemon juice, cream, curry powder. Salt and pepper to taste.
  5. Drain broccoli and place it on the bottom of oven dish. Place the chicken on the top of the broccoli and cover completely with the sauce.
  6. Sprinkle some cayenne pepper (or paprika) on the top and bake in the oven for 30-35 minutes.

Very good. You might want to use canned grean beans if you don't like green beans too much.

I tweaked this recipe a little bit by adding cauliflower and topping with cheese. I have to say I love the flavor! The curry is really good and the texture is wonderful. I cooked it covered for 30 minutes and uncovered for 5 minutes. My whole family liked it :)

Absolutley one of my new favorites! I used heavy cream and topped with some cheese. I actually put my version of this recipe in on here and came out with about half the carbs as this recipe! I think the particular mayo you choose makes a big difference..

I made this last night for dinner. It was absolutely wonderful and my husband really loved it too. The only thing, it was more "chunky" than creamy and it was a bit watery. (if it had not been for that part, it would have gotten 5 stars) But the taste was fantastic!!

Broccoli is always soggy - I prefer not to bake it in but pour the mixture on top of freshly made broccoli when it is time to serve. Other than that it is tasty. I would leave out the mayo next time and add Parmesan.
