So here's the results of my test smoke. Final product off the smoker is amazing, couldn't be happier with how it turned out. My Weber sure is ugly right now, though, but I haven't lost a step, in fact this was probably the easiest smoke I've ever done. It's going to be a great summer!

I smoke on a modified Weber Kettle, I took a pair of bolt cutters and cut some of the grates out of the rack so it's easier to feed the fire. To smoke on a Weber Kettle you build a fire on one side, get that thing going hot and burn it down to a bed of coals, then add your hardwood, I use 2" diameter Pecan limbs I cut six inches long (doesn't have to be precise, you get the idea), place the meat on the opposite side from the fire and put the exhaust holes over the meat. Any kind of grill would work, just build the fire on one side and put the meat on the other, optimally have your fire opposite your chimney so the smoke draws across the meat. I typically only have to feed the fire about once an hour, if you're using smaller fuel, probably every thirty minutes.

Thank you for details, need to try. With fish we were able to use regular Kettle grill as fish cooks faster.
