Greetings my Buddies!

I had a rough night due to some insomnia - I generally do not bring my work home but last night I was worried about a patient, blah, blah, blah.

I work with many adolescents so it turns out she has decided I am the "enemy" because I had the audacity to agree with her Father about the idea she might need consequences for smoking weed, having sex and lying. We will move her on to another practitioner...

So, I had a lack of sleep but went to Orange Theory Fitness as usual and had a good workout! I did not crap out and even hung around to do an extra 10 minutes of dumbbell work. I am shocked at the energy I have with this different way of eating.

Some folks asked about the eggplant recipe:


PER SERVING: 70 calories, less than one gram fat, 4.5 grams fiber, about 9 net carbs, about 3.5 proteins

One eggplant
cooking spray
1 cup tomato sauce
2 large portabella mushroom tops
1/2 red bell pepper chopped

chopped onion to your taste
fresh garlic clove to your taste

Very thinly slice an eggplant rounds (keep the skin on, it is full of vitamins)
Spray cooking spray on a cookie sheet and bake at 375-400 degrees until slightly crisp - turn once

In a small casserole dish, layer a small amount of tomato sauce, then eggplant rounds, one Portabello top, one half the red pepper and one half the onion. Repeat the layers until all ingredients are used. Pour any leftover sauce over the entire dish. Bake at 350 degrees until bubbly and vegetables are soft all the way through.

Cool before eating to let the flavors mingle. Makes four servings, Tastes great as a side with ground beef or chicken.

Eggplant dish sounds yummy! I am eating a lot of protein and not very many carbs lately, and I guess I feel pretty good. It's hard for me to judge how I feel. I feel pretty much the same all the time, unless I am just wiped with illness. Tonight I do not want to go to the gym. I am going, I know, because I put on my gym clothes. I am going. But I really want to stay home and get in bed with a good book and a couple of sugar free brownies. No, must go! To the gym!

I copied the recipe HCB! This will fit right in with the diet I am doing. YAY! Thank you!!! :) Sorry you had that experience with the teen. Kids know everything at that age and the adults are the enemies. I remember how it was when I was a kid. (not that I would ever do anything wrong) ;) Don't give it another thought.

Sounds like issues with dad.... eggplant sounds good. I haven't had any for awhile.

Actually the kid's DAD is awesome and correct about the kid. The parents are divorced (no surprise) and the mother has a mental illness, so when the kid wants freedom for a while she goes and lives with her mom and then the Sh@t hits the fan!

You can't please everyone. Hopefully, she will turn her life around before it spirals out of control. I am sure you did the best you could for her.

Just trying to validate her behavior. Perhaps she needs someone to agree with her because she doesn't quite believe it's okay herself. Regardless, I know you gave it your best, and although she's going to a different practitioner at least she is getting the help she needs. Too many kids don't. You do your part, and you should sleep soundly at night for it.

meletonin helps me sleep with out the usual pill hang over.. its natural and my dr recommended it.. I only use as needed and take early .. Do you just cut the eggplant in half and top or do you chop up all ingredients and make like a hash ?
