Holy Mother of perpetual succour!!!! Thank you all and I mean sincere thanks for all your posts messages and mails with help on the baking for Tinny that you sent - each one is treasured and truely appreciated tremendously.

When I got home last night I pull out one of the many downloaded recipe's (the easiest one I could find) and went to work amid plumes of almond and splenda dust and to the gloopy sound of beaten eggs and melted butter... it was a real simple muffin mixture... into the moderate oven for 15 mins - during which time I was told 100 times "NO you can't open the oven door, just to check"

Then a wonderous thing occured...

after about 10 mins there was this smell in the kitchen which was NOT burning..it actually smelled of ....baking. All the boys INCLUDING the teenage human dustbin (Conor) became interested..so the timer went off... and out came the baking trays....with these things that looks amazingly like muffins/buns...let them cool for a few mins before we all had one...

I could nearly moisten me eyes at this point... a resounding success they were... no throwing up or grabbing at the throat...no cramps or dashing to the loo and lots of requests for more!!! Am delighted and will now progress to include many of your kind suggestions.. thank you.

I'm sorry that I never got to post to your journals yesterday - I started to but then work whisked me away completely and I never got back... will try to do better today. 'tis a daunting task at times to journal and make comments isin't it... can take over an hour at times!!

Oh ... I telephoned the internet company with my stern voice yesterday demanding to know when installation would take place (considering that I paid them weeks and weeks ago) after many apologies they assure me that they will be with us at the end of this week or the start of next week for sure.. which means of course that me carefree days of being able to prance around here in me underpants will be over... cause of course Sarah is mad keen to meet all the wonderful people that I keep telling her about..Remember now to let her know that I'm generally well behaved and only use words like "feck 'n' brastrap 'n' speadable cream" on a limited basis... coughs...

So off I pop for a few days R & R.. but hopefully I'll talk to ya from home next...

*doing the Vulcan sign* as I say..."Eat well and prosper"

Hehehehe... "eat well and prosper"... you crack me up! And a big WOOHOOO to the talented baker! That's great that your muffins met with resounding applause. I'm sure you will be the "go to" person now for all low carb recipes now! If this is possibly your last week for "prancing in (your) underpants" then you'd better do it up right and make it a week to remember =)

Want to jot a quick note, the BEST site for diabetics is dLIFE.com you can find all kinds of info, articles, RECIPES, blogs, diabetic educators, where to find a seminar, new products, lots of RECIPES :) some are marked low or vert low carb :) luv the new pic's, I especially like the one with the cowboy hat, its not just a hat, its a way of life!

Glad your muffins turned out to be a hit and that you are getting some R&R time. We'll miss you, but hope to see you soon from home. We're all looking forward to meeting the infamous Sarah....

Master Chef Davey has a nice ring to it- and loving the new photos everyday as I hang my head in shame- mine has been the same since April. get lots of good food for the big R&R and tell Sarah we can't wait to meet the woman who rules that roost. Have fun and good munchies.

LOL Bravo!! So glad the attempt was a broadly successful one!! There really are a LOT of recipes to "try"... some are great, many are "good" and others... well, you'll not try again. lol OH... I just remembered a no bake cookie that I made at Christmas! lol It's about 5-6 cups of Honey bunches of Oats cereal, (low in sugar, and I use the one with almonds, for extra protein), 1 cup honey and 1 cup p. butter. Mix up and form into little drop balls on some wax paper and voila! =D I put them on a baking sheet and froze them (to stick together a bit better), and we ate them a month later in minutes at a get together we had, a true hit! OH,... I also added a cup of butterscotch morsels... not "great", but it makes a HUGE batch and if you can find a low sugar chocolate or tiny morsel, I'm sure that you can add them w/out too much sugar to the cookie, that is delicious and worked well w/my blood sugars! :) Have a terrific time off. Look forward to "meeting" miss sarah, too. :)

I agree Dave, it's so hard to comment on everyone's journal but, I do try to at least read them! It does take a lot of time, especially when you're supposed to be working!

Well kim coughs, its like this... [think fast davy think fast] - I DO come in very early to work AND I have coffee and lunch breaks too ... and I am a semi boss type thingy.... and I DO work like a savage... periodically... Oh is that a very important business call I hear... sorry will have to take this *zoooms* away like Homer Simpson chasing a donut! *s*

OK, now maybe you should share your muffin recipe of ultimate success!! :) I am so glad they were a hit and they inspired you to try more. You will soon have a full arsonal of low-carb desserts to keep you all on track. Congratulations! You continue to inspire. I can't wait to meet Sarah!!!! Tell her I already feel like we're friends.

Daithi is now a cook in the....in the....KITCHEN?! I'm just so excited that your family is still shhhh (healthy!) LOL OK, i'm just kidding! cooking is overrated, my friend! Tis simple, yes??? have some great R&R. We'll miss your cheeriness...and goofiness! :)
