I get some nice chicken recipes off eatingwell.com. My favorite is Turkish Chicken which uses yogurt and mint as a marinade.

I don't have time for the Crock-Pot at this point in the day. I do have my instant pot, but I wasn't impressed last time I cooked chicken in it. Was sorta rubbery and I followed the instructions exactly.

I love an Italian chicken soup. Boil it, even frozen. Then shred it, add back to broth with diced tomatoes, mushrooms, peppers, onions..anything you want. Garlic, oregano and basil. So yummy

I’m just going to cook my chicken breast tonight in a cast iron pan and put over a bed of spring mix salad with crumbles of bacon, mozzarella cheese, tomatoes and a lite dressing. Sounds boring but is tasty and easy.

If it's been frozen solid and then thawed, there's probably no way to fix it. Might as well cook it and eat it.

Chicken Alfredo, using the lowest-carb ready-made Alfredo sauce I can find, over spiralized (or grated) zucchini "noodles" or "rice." DELISH!

One of my favorite summer go-tos is chicken breast marinated in Italian dressing and then grilled. Usually serve with grilled veggies (faves are squash, peppers, onions, and mushrooms). So good and so easy!
