An excellent low carb substitute for pancakes.
Ingredients
Directions
- In a small bowl, beat egg white with electric mixer until stiff peaks appear. Set aside.
- In a large bowl, beat cream cheese until smooth.
- Beat egg yolks, sweetener, cinnamon, salt and flaxseed meal into cream cheese.
- Fold in the egg whites.
- Heat large heavy fry pan over medium low heat. Grease lightly with butter.
- Form pancakes using about 1/4 cup of the batter for each pancake. Cook until golden brown, about 2-3 minutes on each side. Don't rush - if the temperature is too high, the butter will burn.
- Note: can be served with butter, fruit, whipped cream, whatever you like. I made syrup by mixing sugar free honey substitute with artificial maple extract.

Made this when daughter had friends sleep over, it was a big hit. Dtr liked it much better than the last low carb pancakes I made. These are very light and fluffy. A definate keeper.

I have to comment on a comment that Marcy47 made..splenda does NOT contain aspertame..only sucralose and usueally (dextrose) as an anti cakeing agent

This is a great recipe! I tried it this morning with sour cream instead of cream cheese and it turned out wonderful!

Excellent! My husband loved them and insisted we "cook them this way" from now on. The 1st 2 came out 'crepey' so I added 1/2 tspn of baking powder and 1/4 tspn of baking soda to the remaining batter in effort to get a little more rise. It worked. Also added 1 tspn pure vanilla extract. They came out moist - more so than the regular flaxmeal pancakes I traditionally make. And overall, less carbs. Excellent flavor and we both had 4 small-to-medium sized pancakes with this one batch. So it yields an ample serving.

SPECTACULAR! I could barely tell that it was low-carb! It just had a very, slight, cream-cheese flavor, and it was DELICIOUS!
