Zucchini Casserole

Great for summertime gardeners!



  1. Layer in a casserole dish sprayed with cooking spray these ingredients in the following order.
  2. Zucchinni slices (par-boiled and drained), onion slices, tomato slices, pepper, turkey bacon (cooked and crumbled), shredded cheese (the cheese doesn't melt like "real" cheese but still tasty).
  3. Bake at 325° F (160° C) for 40-50 minutes.

Hey, this was great! It is quick to prepare and delicious; I used real cheese though :) Also, I added a can of tomatoes on one layer which made it kinda like really healthy pizza :) thanks for the idea! It's a keeper!

I made mine with lots of seasoning with my turkey burger giving it a sausage taste instead of bacon. Had brought it to potluck and my daughter asked for it again.
