Roasted Cauliflower with Parmesan & Garlic
Cauliflower roasted with parmesan cheese and spices makes for a terrific side.
Ingredients
Directions
- Preheat oven to 400 °F (200 °C).
- Cut cauliflower into florets and put in a single layer in an oven-proof baking dish. Toss in the garlic.
- Squeeze lemon juice over cauliflower and drizzle each piece with olive oil.
- Sprinkle with salt and pepper. If the oven hasn't reached 400°F yet, set aside until it has.
- Place casserole in the hot oven, uncovered, for 25-30 minutes, or until the top is lightly brown. Test with a fork for desired doneness. Fork tines should be able to easily pierce the cauliflower.
- Remove from oven and sprinkle with parmesan cheese. Serve immediately.

Excellent recipe for the the Ancient European Diet. The roasting technique adds a real touch of antiquity.

While it is a healthy recipe, it is not good for the Jenny Craig Diet because the breakdown for Fat 56%, Carbs 31%, and Protein 13% is in opposition to the usual breakdown that Jenny advocates of Carbs making up about 50% and fat and protein splitting the rest of the distribution...HOwever, if butter or olive oil were left out and a Pam-like spray used instead, it would be a much better fit for Jenny Craig dieters.

I love this dish and did not care for cauliflower. Now I am going to try other cauliflower recipes. Thanks CBella

This is my husband's favorite vegetable dish. I usually add additional garlic, and sometimes a bit of oregano too. So quick and easy for a weeknight meal.

I put all the ingredients in a plastic bag and mixed it up that way. I only used one tbsp of olive oil and some of that stayed in the bag when I was done.
