Classic Mashed Cauliflower

A great substitute for mashed potatoes.

Ingredients

Directions

  1. Chop cauliflower into flourettes, boil until very tender (about 10 minutes).
  2. Drain and place in a blender or food processor.
  3. Add olive oil and water, one tablespoon at a time until a smooth consistency, similar to mashed potatoes, is reached.
  4. Season with salt and pepper and/or chives to taste. Serve immediately.

you can add 1 0r 2 laughing cow cheese snacks, they are so creamy, they add flavor and a little nicer texture and only 70 calories to the whole pot!

Made this today with a twist, i put a little shredded cheese in the mixture sprinkled some parsley flakes on top and it was delicious, thank you for posting the recipe

I would raise the rating with a few additions. Butter instead of olive oil. ONLY use the florets- no stem! Not only frain, but squeeze water out of florets with paper towels- or steam instead. Add a t of minced garlic, salt and pepper to taste, 2 T heavy cream, and 2 oz of hard or semi soft cheese- I use Basque from Trader Joe's. Do NOT add more water! Making these changes, the recipe is a 10!! (Btw- the 5 rating doesn't show up on my phone. The most it will allow is a four).

I usually just steam my cauliflower. The recipe looks good, so I will have to try it with the olive oil. I eat low fat, not NO FAT.

I made this using non-fat spray margerine, salt, pepper and a touch or gralic. My husband and I love it. I had never eaten cooked cauliflower prior to making this recipe.
