A delightfully easy flavorful chicken dish that will surely become a favorite.
Ingredients
Directions
- Pound chicken breasts to about 1/3" thick.
- Place ham on breast then 1/2 oz of bleu or swiss cheese.
- Roll up; securing with a toothpick.
- Dip each breast-roll into a mixture of the melted butter and beaten egg.
- Roll in parmesan cheese and place in buttered baking dish.
- Bake at 350 °F (175 °C) for 30 to 35 minutes or until browned and tender.

I made this recipe last night and it was delicious, my husband even enjoyed it. Mine didn't get real dark, so I broiled it for a few minutes at the end, which helped some. Next time I may try 1/2 ground pork rinds and 1/2 parmrsan mixture. Also, dh wants more cheese next time cause it oozed out!

I make a similar dish like this, there's a few different things I do with mine. I don't dip mine in melted butter, I dip it in room temp. water or about 1/2-1 cup of chicken brothe in a bowl then into the egg mixture and lightly pressed into the parmesan cheese. I like putting chopped fresh spinach in mine as well. I like using honey pepper ham from the deli (kinda thick).

My husband and I are both doing the South Beach diet and sometimes he misses his breaded foods. Chicken Cordon Bleu is one of his favorites and he loved this. Definitely a keeper.

Yumaroni! Sounds great for South beach. I think even lowfat dieters could use it with reduced fat or fat free cheeses, egg whites, and reduced fat margarine. There are many options now.

Sounds great!!! Just do a little susitute for the G.I. diet but it is a great idea!!!
