Chicken Artichoke Pasta

A pleasantly surprising artichoke pasta.

Ingredients

Directions

  1. Cook pasta according to package directions.
  2. Meanwhile, in a large non-stick skillet coated with cooking spray, cook chicken in 2 teaspoons of olive oil over medium heat until no longer pink. Remove and keep warm.
  3. In the same skillet, cook and stir broccoli in remaining olive oil for 2 minutes. Stir in mushrooms, tomatoes, and garlic; cook 2 minutes longer.
  4. Add artichokes, salt and oregano; heat through.
  5. Combine the flour with broth until smooth; stir into the pan.
  6. Bring to boil; cook and stir for 1-2 minutes or until thickened. Add reserved chicken.
  7. Add pasta to chicken mixture and toss to coat.

pretty good. wish it had thickened up a little more. I even added more flour.

Wow. Delicious, and my husband even ate it! I omitted the oil and salt and added more broccoli and chicken for our needs. Great dish.
