A quick toss-together and bake meal that's great for hungry families.
Ingredients
Directions
- Preheat oven to 350 °F (175 °C).
- Coat bottom of an 8 x 11" baking dish with olive oil spray. Set aside.
- Brown ground beef. Drain well.
- Add chopped red bell pepper and chopped spinach to ground beef and mix together.
- Pour ground beef mixture in to baking dish. Use a spatula or wooden spoon to evenly distribute the mixture.
- Sprinkle 1 cup (half a bag) of the shredded cheddar cheese over the mixture.
- In a separate bowl, scramble together 5 eggs. Add salt and pepper to taste. Pour eggs over beef mixture.
- Bake at 350 °F for 15-20 minutes. Remove from oven and let sit for 5 minutes before serving. Cut into slices or squares.

I thought this was good and so did teen son and DH. Substituted green chiles for the peppers since I had it on hand. Used egg beaters instead of eggs. A bit on the bland side so spice it up to taste. I used Mrs. Dash Southwester blend in the egg mix. Went well with the green chiles. Will make this again.

This recipe is absolutely disgusting!!!!! My husband wouldnt even try it! If i could have given it a zero i would have, it was a complete waste of a pound of chop meat.

I used chopped broccoli instead of spinach, and lightly cooked the pepper along with some chopped garlic before adding it to the cooked hamburger. Next time I'm going to try some onion. I'll be making this one again. Oh, I topped mine with a little salsa. Yum.

Grated in carrot and popped some mushrooms in too was delicious. My 4 year old said he wants it every night! A definite win for this meal.

Made this with just the egg whites along with some extra spinach and spices. Soooo good!

I used egg white substitute which took almost 350cal out of the whole meal and I added 1cup of bell pepper not 1/2 plus I added 1/4 cup green onion! Super good! My family says its a keeper!
