A quick and tasty Filipino dish that is usually served with rice.

Directions
- Slice bitter melon then massage with salt. Set aside for 5-10 minutes. Rinse with cold water then drain.
- Chop garlic, shallots, and tomatoes. Slice the chicken in cubes.
- Sauté garlic, shallots, and tomatoes in a non-stick pan.
- Adjust the heat to high then add chicken. When the chicken is almost cooked, add a splash of water to prevent it from drying and clumping.
- Season with fish sauce and black pepper.
- Add the drained bitter melon and stir lightly. Cook for 2 minutes.
- Beat the eggs in a bowl then add to the pan. Mix lightly until the egg is cooked. Turn off the heat and serve.
