Jalapeño Poppers 6 jalapeño peppers 1 T butter 1 T minced garlic 1 medium onion minced 6 ounces cream cheese 1/4 cup cheddar cheese 2 slices cooked bacon Melt butter add garlic and onion cook till slightly browned Add cream cheese cook till melted Slice 6 Jalapeño Clean out seeds and white vein Fill with cheese filling Top each with cheddar and bacon Bake @ 350* 25 minutes or until peppers and cooked

Geeeeeeeeeeeeeeeeez! Looks so good but with my WOE the only ingredients I could have are the garlic and onion. Not crazy about Jalapeno peppers but all peppers are nightshades. Maybe when I get to maintenance and if I get rid of the inflammation and high cholesterol I could make with bell peppers. I see so many pictures of food I just can't have right now and I know everyone is losing weight eating it.

Hi Fritzy how you holding up on that new woe? Got my blood work back today everything was in the normal range. Went to Georgetown, SC walked 1.5 hours. Beautiful town looking over the Atlantic with little shops but most were closed till summer!

Patty: I'm doing better. I've got a glass of Diet Coke in front of me now - kicking that habit will come later. The things I decided to give up because of the above recommended cholesterol level - red meat, shrimp, egg yolk, that's been easy and I'm not tempted (yet). And I've been avoiding processed meats for a year and a half, but all the pictures of bacon are hard to see. I am finding I am hungrier than I was previously. It's mental I think. When I'm totally committed I don't allow myself to feel hungry. I walked 1.5 hours today too! With the dog so don't do much more with him, not sure how hard the pavement is on his tiny feet and long legs. Good for you and your blood work! Something is going on with my inflammation and I just hope the diet can really help with it. I went to the dentist for the first time in 5 years (couldn't afford the insurance until this year) and he told me there is some inflammation in the gums. Hopefully the cleaning will help with that. No other issues there but maybe that inflammation could be part of why the blood results are always so high. I told you more than you asked or wanted to know.

@Fritzy- I’m with you on the nightshades, but you can buy noncured turkey bacon to eat occasionally right? And you do have some legal cheeses on your low cholesterol diet? You could do a version of these with zucchini hollowed out, or yellow squash with garlic and onions and spice it up with pork sirloin cuts if you are allowed it or use chicken with a small amount of carrot or apple or lemon grated into it if pork sirloin is on the no list? (I have to watch my kidneys, so pork, being a white meat, is allowed! LOL) 🤷🏻‍♀️I use people’s meal pictures as inspirations for a place to maybe start for something a bit different that I might not normally try. But I have so many food allergies and sensitivities that rarely can I eat straight from someone else’s recipe. Good luck on your journey! 🙋🏻‍♀️

Those poppers look great! Wow. Fritzy. Low cholesterol? One of the very main jobs cholesterol does is address inflammation. The more you limit good fats, the more your body will struggle with inflammation. :/ Healing blessings to you!

Ann Marnae- My total cholesterol and the bad cholesterol (LDL?) were both high, not high enough for medication so I'm hoping to get that lowered through my diet. My HDL was fine - I do eat plenty of foods with good fat - almonds, walnuts and avocado and olive oil. Smprowett: I'm not doing a low carb diet, just more or less watching calories and trying to limit processed foods. My doctor said especially processed meats. He said no bacon, no sausage, pepperoni, salami, pastrami, ham. Not sure if turkey bacon is considered a processed meat. Inflammation has been off the charts high for going on 2 years. It dropped in half - but still way too high after a month of eating no processed foods, but I just couldn't keep eating that way-it was changing too much too fast. I think pork is okay, I do eat pork chops once in awhile. Mostly chicken without the skin and fish, which I'm not crazy about, but I'll put it in a stir fry. Doctor also said to eat a low fat diet. I feel sick if I eat greasy food, may have gall stones.
