Delicious, super easy casserole topped with soy cheese.
Ingredients
Directions
- Mix broccoli, cauliflower, the mixed vegetables, mushrooms, and the cream of mushroom soup (fat free if available) in a large mixing bowl.
- Put half of the mixture on the bottom of a baking pan.
- Put all of the soy cheese in the middle, then place the rest of the vegetable mixture on top.
- Bake casserole for 45 minutes at 350° F (175° C) and enjoy after letting it rest for 10 minutes.

I can't wait to try this! Sounds yummy & easy enough for a quad to do. I'll just ask my PCA to cut everything up for me in the morning & I'll make it later in the day.

Easy, low in points; however I just used 2% lowfat cheese instead of soy--really good!

This is such a great recipe. I substituted the soy cheese with 2% cheese and loved it:)
I think next time I make it I am going to make it an entree and add cubed chicken. YUM!!

sounds a lot like casseroles i usually make. I think it will be very yummy and all these ingredients are allowed in phase 1. I'll use fat free cheese though.

This was tasty and easy. I used 2% cheese instead of soy. I am in Phase II of Fat Smash so this seems to fit the criteria.
