These delicious healthy pancakes will satisfy any breakfast craving.
Ingredients
Directions
- Peal, half, and core pear. Dice into 1" pieces.
- Place in microwave-proof bowl and sprinkle with sweetener (like Splenda) and cinnamon.
- Microwave on high for 2 minutes.
- Meanwhile, put yogurt, oatmeal, egg whites and dash of salt in blender.
- Add pears. Blend until smooth.
- Use in same way as pancake batter, cooking over medium heat on non-stick griddle.
- Note: makes 3 medium sized pancakes.

I made them today after scouring the web for ideas to make Phase I less boring. I used Apple Spice instead of cinnamon for a more flavorful pancake. I also added a splash of plain soy milk however the texture was a bit runny so next time, I'll use more of a splish than a splash. It's great for squashing the bread cravings.

Very tasty! They seems to have less structure than regular pancakes, but the flavor definitely makes up for it.
