Mango-Avocado Salad with Lime Vinaigrette
A fresh, filling summertime salad with tantalizing flavors.
Ingredients
Directions
- In a medium bowl, toss mango and jalapeno with 1 tablespoon lime juice and salt.
- Add avocado and gently toss to combine.
- In a small bowl, whisk together the remaining lime juice, zest, sugar, cilantro and oil.
- Toss the black beans with the vinaigrette.
- To assemble, spoon the black beans with vinaigrette into the center of a serving platter.
- Top with the mango-avocado mixture. Garnish with chopped cilantro and black pepper.

Out of my family of 4 none of us really liked it. I think its more of a dip for tortilla chips or something like that. Too bland to eat by itself.

i think this is a great salad for me, i normally eat a salad every day and this sounds both very healthy and yummy.

This recipe was awesome!! i just added a bit more lime juice, and used canned black beans, more cilantro and added scallions. My daughter loved it also!

i know i would like this sald, but i will modify, because i like to mix & match, using, mango, avacado & spinach, with flaxseed.
