Thin crepe like pancakes that are good for Atkins.
Ingredients
Directions
- Blend all ingredients till smooth.
- Cover bottom of pan with non-stick spray or olive oil.
- When pan is hot drizzle small amount of mixture around the pan until you have a pancake shape and very thin.
- Lightly brown on both sides.
- Layer between wax paper.
- Use or store in refrigerator or freeze for future use.

Loved these! I blended up some cottage cheese with splenda to use for filling with a few strawberries. Delicious and very filling!

Loved the recipe..I made them today for quick dinner.modified a bit for a savoury version...added pinch of salt and chilli powder and 2 table spoons of cream...yummmmm

Taste was ok, but a bit grainy in texture. Trying to flip these were completely impossible with out breaking them. Serving size is 12. Crepes are made large so you can fill them, so I only got 4 out of this recipe. Maybe if I had made them super small, they would not have been hard to flip.
