Eight years ago, I gained 60 pounds during my first pregnancy and retained 30 of those pounds after my daughter was born. I had never been very thin, but this was the heaviest I had ever been. For the next five years, I tried and tried to get pregnant with no luck. Finally I tried South Beach diet and lost 45 pounds in four months and was pregnant six months after that! Unfortunately, while I was pregnant I gained back all of the 45 pounds plus a few more. Now my second daughter is two and I still have all the weight from pregnancy. Thank goodness I have a loving, supportive husband (of ten years - yeah!) that has gained weight with me and is going to lose weight with me too. Another motivator for me is that I just turned 35 (ugh!) in October 2007 and I need to be here for a long time for my girls! I also work as an office manager in a medical clinic and would like to be able to maintain a healthy weight since we encourage our patients to do the same.

Summer B.E.A.C.H. Challenge!
My recipe for the Yellow team:

Roasted Pepper and Basil Skewers

Makes: 16 appetizer servings, one skewer each

1 pkg (16 oz.) Part Skim Mozzarella Cheese, cut into 16 cubes
16 fresh basil leaves
2 yellow or red peppers, roasted, each cut into 8 small squares
16 small cherry tomatoes
1/3 cup Italian Vinaigrette Dressing

DIVIDE cheese, basil, peppers and tomatoes among 16 small wooden skewers or wooden toothpicks. Place in small shallow dish. Add dressing; turn skewers to evenly coat ingredients with dressing.

LET stand at room temperature 20 min. to marinate, turning occasionally.

REMOVE skewers from marinade just before serving; discard marinade.


Fresh basil, for instance, offers a healthy dose of blood-clotting vitamin K -- 2 tablespoons of chopped fresh basil provide 27% of the RDA -- as well as vitamin A, manganese, and magnesium.

Red bell peppers contain eleven times more beta carotene than green bell peppers.

Time to go to the BEACH, yeah! Smile

My banned excuse is: I am too tired from work to go home and exercise. I will get to it on Saturday or Sunday.

My changed habit: My goal is to exercise twice a week for at least ten minutes. My other changed habit is to delegate tasks around the house (cleaning, folding laundry, etc) to allow me to accomplish my goal. I also need to realize Saturdays and Sundays are too busy to rely on for exercising.

I need to be honest with myself that exercise is just as important to be able to continue with my weight loss.

south beach diet failing when trying phase 1 for the third time?
Maybe you need to start with Phase 2 instead. I know we all love Phase 1 because we tend to lose more weight faster, but the new SBD SuperCharged book says that if you don't have a lot of weight to lose or can handle food cravings (since Phase 1 was designed to help minimize food craving so we don't overeat and metabolize food correctly), that you should start with Phase 2. And you get so much more yummy food so you won't feel deprived. Also when I tend to eat the same foods every day, I wasn't losing either. You might get something different out of the book, but it is probably worth a try. Smile

new to SBD! need some help - dieting with a family
I started SBD November 1st of last year WITH my family. My family has since fallen off the wagon with my husband being run over several times, lol! I have managed to lose and keep off, so far, 45 pounds. But the only way I am able to do that is to reinforce to the fam that WE are in this together. My girls cried when I broke the news to them that white bread and potatoes in any form is no longer allowed in our house. Being a former poptart junkie, those too are gone. They hated it at first, but now they expect wheat bread and say, "Oooh this is good!" when I try a new SBD recipe. I refuse to be the food police in my house but I also want them to respect me that I am trying to give them better choices for a better life, and so far everyone is pretty okay with it. You can do it too! Smile
