Directions
- In a medium saucepan add black beans and canned tomatoes together and cook through. Remove and place in bowl for further use.
- Clean out saucepan spray with non-stick spray. In bowl scramble egg whites and whole egg with a little milk.
- Put eggs in heated saucepan. Begin to make omelette.
- When almost done add in rice, beans and tomato mixture and top with one slice of cheese.
- Fold over other half to make omelette.
- Remove and place on plate top with favorite salsa.

I forgot to put in onion in the recipe so add in some too and any seasoning you'd like to spice up the beans and tomatoes.

No rice phase 1. I use egg whites, black beans, salsa and guacamole. Avocado can be substituted for oil so I use spray and no yolks. Under 200 calorie breakfast even with 4 egg whites. Use non fat cheese if using guacamole.

This recipe was VERY YUMMY. Since my husband and I are still in phase 1 we took out the cheese, and did all egg whites, but it was still very good! Thanks for sharing!!
