This easy microwaved 'bread' turns out perfect every time.
Ingredients
Directions
- Ground 1 cup of flax seeds.
- In bowl #1: add ground flax, baking soda and baking powder. Mix well.
- In bowl #2: add eggs, water, oil, sweetener (lik Stevia or Splenda) and vanilla. Mix well.
- Add walnuts to dry ingredients.
- Grease a microwave casserole dish - 8" diameter.
- Mix both dry and wet ingredients together. Pour into greased microwave casserole dish.
- Microwave on high for 5 minutes.
- Turn upside down on to a baking rack. Cool. Turn over and serve slices. (Great with cream cheese & berries).

i struggled to find flax seeds so decided to improvise with mixed seeds instead and it is gorgeous!!! really pleased there is something to replace bread! thanks!

This was pretty good considering it is not bread. I actually threw some cinnamon in it and it wasn't half bad. Good substitute for bread and a tasty snack.

I used organic ground flax meal. This bread is a GREAT substitute! I made it the other night to go with a crock pot dinner and it really added to the meal. Very filling, too.

Very nice substitute! I too, was thinking it would be nice with some cinnamon in it... maybe with some light cream cheese? :) Thanks for the recipe!

Not suitable for induction, no seeds or nuts..:( but sounds delicious for the rest of the phases, will definitely be trying this later on.
