Banana-Date Muffins

Low sugar, high fiber fruit muffins.

Ingredients

Directions

  1. Pre-heat oven to 375 °F (190 °C). Prepare muffin pan.
  2. Mix together dry ingredients. Mash bananas in a separate bowl. Add other ingredients and mix until thoroughly blended.
  3. Add dry ingredients and mix until just blended.
  4. Pour into muffin pan - the muffins will not rise much, so fill to the top.
  5. Bake about 20 minutes (check after 15 minutes). Allow to cool at least 10 minutes.
  6. Enjoy.
