I am 43 yo female. I work in the business office at a small christian university in Southern Indiana. I have been married since 1985. I have two children. Elizabeth is a senior in college. She is going to be a social worker. Jack is a freshman at a technical school and wants to be a paramedic. Jack just recently moved in with his sister to be closer to school. About 30 minutes from home. Kind of having the empty nest syndrome.

I love to cook and love food so dieting is very hard for me. I used to own a catering business for a few years and used to decorate cakes. I am always asked to be in charge of the kitchen whenever there is a special project or a fundraiser. Makes it difficult to diet. But I am trying to find new recipes that are good on my diet to help.

encouragement/advice for near meltdown
What I am hearing is that the veggies are the hardest thing for you. If they are hard for you on Atkins they are going to be hard on any diet. Any healthy way of eating is going to push eating veggies. The juicer might be a good alternative for you. As long as you don't add sugars and use the vegetables in their natural state. I know there are alot of people who are just not veggie eaters. The old way of Atkins did not allow for as many veggies as we get now. That is what I like about Atkins now, is being able to eat more veggies. That is why I could not stick with Atkins before. I did not get enough fiber in my diet and is also why most people think Atkins in a meat, egg, and cheese diet when it is not if done properly. Figure out what veggies you like the most and how you like them prepared and stick with those. The MIM is a good choice for breakfast instead of eggs. Try eating lunch meat and cheese for breakfast. I usually don't do many carbs at breakfast unless I do a MIM. I save my carbs for lunch and supper.

Don't get discouraged if you go a week or so without losing lbs. Are you tracking your inches? That is a biggy on Atkins. I did not do that in the beginning and I wish I had. I would get so discouraged because I hadn't lost any lbs. but then I started noticing my clothes kept getting loser and people were commenting on how great I looked. I thought that was weird since it wasn't showing on the scales. Then BOOM!!! One day you get on the scale and you've lost several lbs. Just try to stick with it. It really does work and there are so many good food choices. Have you looked at the recipes on here and also the Atkins site. Maybe that would help you figure out ways to incorporate the veggies. Freezing Foods
I think you can. I havn't tried it before but it seems to me that on one of my recipes it said they were good to freeze. I don't know why they wouldn't be. I have thought about doing the same thing myself. Of course this is just an opinion since I havn't tried it yet.

Jessie is right about measuring yourself too. Measure inches, duration, energy, ect. All of those things. I did not measure inches in the beginning and I really wish I had because that is where I can tell the most difference. More so than the lbs. I've lost.

Sorry, I just noticed that I said "There are too many variables that can cause the scales to go up and down. Weight gain, TOM, stress, ect." Duh, of course weight gain will cause the scales to go up. I meant water rentention. LOL

I know it is frustrating when you don't lose, but don't give in. I went for over a month of up and down and no real loss. Then all of a sudden it started kicking in again. I looked at your diet calendar a little. I am not a good judge of that sort of thing but I was wondering if you were doing total carbs or net carbs. If you are doing net carbs you are too low. You might consider trying to do the net carbs if you are doing total to see if that helps. I know some people swear by doing total carbs but I tried that for a little while when I wasn't losing and it actually made me stall more. Once I went back to net carbs it seemed like it triggered me into losing again. Might be worth a shot. I do encourage you to stick it out though if you can. I know how hard it can be. I have wanted to give up so many times but then something kicks in and I see how this WOE works. Also, wanted to mention that when you work out sometimes it makes you retain water while your muscles are healing. Don't go by not losing anything in a week. I think they call a true stall if you don't lose anything in a month. There are too many variables that can cause the scales to go up and down. Weight gain, TOM, stress, ect. Also, are you drinking plenty of water? They say to drink half you body weight in ounces of water. For example if you weight 200 lbs. you should drink 100 oz. of water. I can tell a big differnce since I started that. It helps flush out excess water and I am told fat as well. Hope this helps a little. I know there are many out there that can give much better advise then me but just know I am here for support just like so many others. We all are in this together and we all have these same experiences.
