how do you make your zoodles?

I've got to make some more zoodles. The Italian chic in me was not happy at all the first time I tried them. I didn't care for the slight crunch. I made them again and didn't mind so much. Still wasn't impressed though 😔. I think we prefer what we are accustomed to most times, so I plan on making them again at some point and hopefully will develop a love/like for them ? 😬😬.

The first time I made them I boiled them and I hated it!!!! They came out soggy. This time I pan fried it first in butter. They get soft quickly but feels a bit like al dente pasta. Sometimes we have to remind ourselves that it's def NOT pasta but it's def what you put on them for taste that helps a lot.
After I pan fried them with some mushrooms, I put them aside. In the same pan I put a couple tablespoons of heavy cream and a little Parmesan. Let that simmer and then through the zoodles and mushroom in the cream sauce. Mixed all together and That's it!!

I found if I lightly salt my zoodles then "dry" them between paper towels, then just put them in a pan with olive oil, they have really nice texture and taste.

I'd do some research on Tilapia...VERY high mercury content and not really considered safe to eat. Just saying. Otherwise, it looks yummy! Maybe substitute Pacific Cod?

This spring, supermarkets in the Charlotte NC region (Harris Teeter, Publix) started selling containers of "veggie noodles" (zucchini, yellow summer squash, beets, so far).

I'll look into the Tilapia.. never knew any of that. I actually don't eat it often. I usually eat more salmon. But I love cod also!
