Zucchini Noodles

A great pasta substitute.

Ingredients

Directions

  1. With a good potato peeler create long "noodles" by starting at the top of the zucchini and peeling wide ribbons down the length of the zucchini.
  2. Continue making ribbons as you turn the zucchini to get all the green part off first.
  3. When the center portion becomes too thin , set it aside to use for a salad and start a new zucchini.
  4. Heat a large skillet on medium high.
  5. Add the olive oil and zucchini "noodles."
  6. Saute the "noodles" for 2 to 3 minutes.
  7. Season with freshly grated black pepper and salt if desired to taste.
  8. Serve with your favorite pasta sauce. I like to eat these with red sauce & meatballs!

That's a great idea! Here I've been waiting for my friend to bring over her spiral tool to make the darn noodles. 😂

I would add sea salt and Ghee for the minerals and extra fat and grate some parmesan as a topping. Definitely trying this!

Awesome recipe. Very simple and easy to make. Note - the calorie breakdown chart here is wrong. The Carb ratio is 14%. Fiber is not counted in the calories, so only the net carbs (Total Carbs - Fiber) should be taken into consideration to calculate Carbohydrate Ratio.

They make spiralizers that will make the prep easier. Cooks Illustrated likes the Paderno World Cuisine Tri-Blade Spiral Vegetable Slicer. You just pull the spirals straight and slice the length of noodle you want. I haven't tried it yet, but am going to order one today! You can use it on zucchini, summer squash, carrots, butternut squash, cucumbers, parsnips, sweet potatoes, beets, celery root and rutabaga. You can also do this recipe with spaghetti squash, that only requires a fork to turn its cooked "meat" into great spaghetti strands.
