Spinach and Chicken Manicotti
A wonderful combination of pasta, ricotta and marble cheese, tender chicken breast and leafy spinach covered with a perfect tomato sauce.
Ingredients
Directions
- Boil the manicotti pasta in water for about 6 minutes.
- Meanwhile, mix together the ricotta cheese, spinach, chicken and spices to taste (add chili powder too if you like).
- Drain the pasta carefully and as soon as you can handle touching them, lay out on the counter to avoid crushing and getting stuck together.
- Holding the noodles with your finger blocking one end and cupping the rest, gently stuff them with the spinach mixture with a fork.
- Place them in rows in a greased pan (Pam works great). Cover with spaghetti sauce.
- Add 1/2 cup water to baking dish and cover with tinfoil (this will let the pasta absorb the additional moisture.)
- Bake at 350 °F (175 °C) for 25 minutes and remove the cover.
- Sprinkle with cheese of your choice and bake until almost all additional moisture is gone and the cheese is nice and gooey. Serve with a side of salad or steamed vegetables.

This recipe is totally inaccurate as it is not 10 servings so I would be very cautious about adding this to your food log for the day as it is way off on the calories,etc. Also, listing spaghetti sauce as an ingredient is not good because there are so many on the market with considerable varying nutritional content. Good idea here but would probably make up my own recipe. Would also be good layered like a lasagna.

Used my own variation of Italian seasoning, garlic and onion powder as well as a little basil also used low fat cottage cheese and added a little feta cheese was really good!

I'm going to try this....sounds great...and of course I will go with the non fat ricotta...and 2% cheese. I saw the comment from Tina about a healthier sauce...wondering what she used?

Great recipe! Would use jumbo shells instead of manicotti next time though.

This is delicious except 3 tbsps of pepper is way too much. I used 2 teaspoons of pepper, thought it looked liked a lot and stopped. That was so overpowering that I doubled all the other parts of the filling. The pepper taste was still too strong. I ended up tripling the other parts of the filling, and it was still very "peppery" but at least edible. This recipe would be great with much less pepper.
