Salmon Cakes with Dill Sauce

Delicious and filling salmon cakes that are sure to please.

Ingredients

Directions

  1. Sauté onion and red pepper in olive oil until tender. Drain salmon and put in a mixing bowl. And onion and red pepper mixture to salmon.
  2. Chop 1 sprig of the dill and add it to the salmon mixture, along with the breadcrumbs, mayonnaise, egg, juice of 1 lemon and seasoning.
  3. Make 4 even patties from the mixture and cook on a griddle pan (with a tiny bit of cooking spray like Pam) for about 6 minutes on each side.
  4. To make the dill Sauce, combine sour cream, juice of the other lemon and the rest of the chopped dill in a small bowl and mix well. Season to taste with salt and a little hot sauce, if you like.
  5. Serve sauce on the side or right on top of the salmon cakes!

I made this , instead of using bread crumbs, I used flax meal.

Used ground oats instead of breadcrumbs and omitted the mayo.

Pretty yummy! I cut the recipe in half for 2 of us. If you do this, use a medium egg.

I have a very simular recipe, called Salmon croquet. It only requires the Canned Pink Salmon Chopped onion italian bread crumbs (or plain whatever you have) yellow corn meal one egg don't pour the water off the salmon use it for moisture.(make sure to debone the canned Salmon and take off the skin, if it grosses you out like me.) Mix all together and fry in Olive Oil(pam spray if you desire) same time as above or until desired goldeness. THEY ARE DELICIOUS! Me and hubby have them for breakfast with Rice, and eggs. WONDERFUL!!

substituted with chunk tuna in water, and added hot sauce and crushed red pepper to the cake for some spice. wonderful! light, tasty, easy. they also reheat VERY well on the stove. the dill sauce is also very, very good- i've been making it as a veggie dip too!
