Raspberry Cheesecake Squares

These low carb cheesecake squares are very good.

Ingredients

Directions

  1. Sprinkle gelatin into boiling water.
  2. Stir until well dissolved.
  3. In bowl, beat cream cheese until very creamy.
  4. With mixer running, add geltin,1/4 cup at a time.
  5. Mix until thoroughly combined.
  6. Pour into 8x8" pan, refrigerate until firm, about 2 hours.
  7. Cut into squares and serve.

How many ounces of cream cheese is this? I ended up using about 20 oz. I'm not sure how much a small cream cheese is. 8 oz? I haven't tasted it yet.

This tastes...weird. It's really dense and strong tasting with a sharp artificial flavor. If I am in dire need of a sweet, I'd eat it but will keep looking for something more "enjoyable". P.S. I really, really wanted to like this recipe.

I made this the other night. I used fat free cream cheese. It isn't that bad. I like it but I think it is missing something not sure what. However I would make it again to have in the refrig for a light snack.

Maybe would have tasted better if my mixer did a good job (have a single paddle mixer), it all came out lumpy & looked like a cottage cheese jello ensemble. But it was cream cheese! I can dig on that!

These are to die for! Just made them and they are amazing. I mixed some heavy whipping cream and stevia for a little whipped topping!

This was AWESOME.Loved the Raspberry but will try other flavors at a later time.I also added a little lemon juice to the cream cheese to soften it faster.
