Your comment that they re-heat well in a vacuum bag in hot water may be life-changing for me. I've never been able to tolerate the taste of re-heated meat... but last night I tried warming some leftover carnitas with this method and I was amazed at how good they tasted. Thanks so much for the tip!

@Britt, not just re-heating but cooking some meats this way in the first place has been a game changer for me. It's the only way I can get chicken breast reliably delectable. @CB, your bride thinks the way I do. One man is too &^%$ much work for just one woman to keep up with!
