Trout with Fresh Herbs and Lemon

Healthy, tasty and sophisticated enough to serve at a dinner party.

  1. Blend together the spread, herbs, lemon rind and seasoning. Spread the mixture over the trout fillets.
  2. Lay each fillet on a large square piece of foil and wrap loosely.
  3. Cook in a pre-heated oven at 350 °F (175 °C) for 15-20 minutes until cooked through.
  4. Garnish with parsley and serve with lemon wedges, potatoes and your choice of vegetables.

This is a lovely, simple meal and low enough in calories to leave room for pudding and/or wine! For a more substantial meal, you can use whole trout instead - just increase the cooking time by 5-10 minutes.

Brilliant. Fits the diet AND tastes great! Also as a tip for anyone using this recipe if you beat the trout down the centre before defrosting it, and the remove the backbone it's much easie to eat when finished :)

Not Paleo, has potatoes and vegetable spread. Use coconut oil. :)
